Chicken Afritada

Whenever we’re talking about food that Filipino’s inherited from the Spaniards, Afritada is one of the dishes that stand out. In Philippine cuisine there are several dishes that use tomato sauce based ingredients and Afritada is definitely one of them.

There are two types of Afritada, pork and chicken, and chicken is the easier version to cook.

For all my non-Filipino visitors, please give this tasty recipe a try.This maybe the beginning of a wonderful new experience in Filipino cuisine.

* 1/2 cup vegetable oil
* 1 onion, chopped
* 1 tablespoon chopped fresh ginger
* 1 whole chicken, cut into pieces
* 1 (10 ounce) can tomato sauce
* 1/2 cup soy sauce
* 1/2 cup oyster sauce
* 2 teaspoons garlic salt
* 1 (10 ounce) can baby peas, drained
* 1 red bell pepper, cut into strips
* 4 medium potatoes, peeled and cubed
* 1 pinch ground black pepper
Prep Time:  20 Min

Cook Time:  45 Min

Ready In:     1 Hr 5 Min

Directions:

1. Heat oil in a large skillet over medium-high heat. Cook onion and ginger for 3 minutes, browning slightly. Lay chicken in the skillet, skin side down. Fry until golden, about 10 minutes, turning once with tongs.

2. In a bowl, whisk together tomato sauce, soy sauce, oyster sauce, and garlic salt, and pour evenly over chicken. Gently fold in peas, bell pepper, and potato. Simmer 20 to 30 minutes, or until chicken is cooked through and no longer pink in the center. Season with ground black pepper.

    hi. i made this dish and my husband and i really liked it. the first night we had it for supper, he says “this would be really good in a chicken pot pie”. i made more than the recipe called for so the next day, i revamped it as chicken pot pie. it was really delicious.

    I’m eating my chicken afritada (with rice of course) while reading this post and telling myself this is exactly how I cooked my afritada! Its funny how a lot of filipino women know this recipe by heart just by watching their own mommies cook it for them. =) Thank you for sharing this recipe!
