Pancit – A National Filipino Treasure

There are so many different versions of this great dish based on regional tastes and Filipino culinary history. If you are new to Filipino food, give this recipe a try. It is a great way to get hooked on our wonderful foods.

This takes some time to prepare the ingredients, but it is very simple to make.

Ingredients:

* 6 garlic cloves, minced

* 1 medium onion, chopped

* 2 lbs chicken

* 1 teaspoon pepper and a pinch of salt

* 4 quarts chicken stock

* 1/2 cup soy sauce

* 1/2 cup dried mushroom, soaked then sliced

* 1 cup snow peas

* 3 stalks celery, sliced

* 4 carrots, julienne

* 1/2 head cabbage, shredded

* 1 (10 ounce) package rice noodles

* 2 tablespoons olive oil (optional)

* chopped green onion (optional)

SERVES 6 -8

Preparation:

* In a wok or large skillet, add 2 tbsp of olive oil and brown 6 cloves of garlic. Add onions and cook until clear.

* Add chicken. Add pepper and salt to taste.

* Add chicken stock and soy sauce until the chicken is covered 3/4 of the way. Bring to a boil.

* Add remaining ingredients and simmer for 30 minutes.

* Toss in noodles until completely mixed.

* Optional: Add 1 tbsp of olive oil for color. Top with chopped green onions.
