Stuffed peppers are a family favorite at our house. Easy to make with an endless variety of filling recipes, you’re sure to find something that will please everyone. Beef can be combined with rice, barley, pasta, cheese or just veggies to fill bell peppers. For fun, try using a variety of green, yellow and red peppers. Here is my favorite recipe that is quick and easy to make.

1 can (8 oz. size) tomato sauce

1 cup soft bread crumbs

1 cup grated cheese

Serves: 6

Ready In: 30-60 minutes

Preparation:

Cut tops off peppers, remove seeds and precook for 5 minutes in boiling water.

Chop tops and add to beef after browning. Add salt, pepper, onions, garlic, and tomato sauce. Add crumbs.

Fill peppers. Top with grated cheese and sit upright in baking dish with water in bottom. Bake at 350 degrees for

40 minutes.

Serve on a bed of Spanish rice with a side dish of re-fried beans. A fresh green tossed salad crowns a great dinner.
